Potato

Step 1

Preheat the oven to 400°F. Clean the potatoes & slice into wedges.

Olive oil

Step 2

On a sheet tray lined with parchment paper, add the potatoes & a generous drizzle of olive oil. Season with salt & pepper. Toss to evenly coat. Roast for 30 min at 400°F.

Parsley (fresh)

Step 3

Meanwhile, wash & finely chop the parsley.

Butter (unsalted)
Garlic

Step 4

Prepare the garlic butter. In a bowl, combine softened butter, grated or minced garlic, chopped parsley, salt & pepper. Mix it all together.

Zucchini

Step 5

Wash & cut the zucchini into half-moons.

Heat a bit of the garlic butter in a pan over medium heat. Add the zucchini, salt & pepper. Stir & cook for 5-6 min. Remove & set aside.

Beef (skirt steak)

Step 7

Add the remaining garlic butter to the same pan over medium-high heat. Pat the steak dry with a paper towel. Season with salt & pepper. Add the steak to the hot pan & sear 2-3 min on each side or until cooked to your liking.

Step 8

Transfer the steak to a cutting board & slice.

Step 9

Remove the potatoes from the oven. Serve the potatoes on a plate with zucchini & steak. Spoon over any leftover garlic butter. Enjoy!
