Tomato (beefsteak)

Step 1

Clean & small dice the tomato.

Jalapeño

Step 2

Halve, deseed & finely chop the jalapeño (optional). This will add some heat to the meal!

White onion

Step 3

Peel & small dice the onion.

Lime

Step 4

In a small bowl, combine the onion, tomato, jalapeño & a squeeze of lime juice. Season with salt & pepper. Mix it all together.

Canola oil
Corn tortilla (soft taco)

Step 5

Heat a generous drizzle of oil in a skillet over medium heat. Once the oil is shimmering, add the corn tortillas. Cook for 1-2 min on each side until crispy. Transfer to a paper towel lined plate to cool.

Egg

Step 6

In the same pan, cook the eggs to your liking. For sunny-side up, crack in the eggs. Fry, undisturbed, about 3 min. Season with a pinch of salt then remove from the heat.

Refried black beans
Queso fresco
Avocado

Step 7

On a plate, spread warm refried black beans over each tortilla. Lay the fried eggs on top. Spoon the chopped veggie mix over the eggs. Sprinkle queso fresco on top & garnish with sliced avocado (optional). Serve & enjoy!
