Butter

Step 1

Preheat oven to 400°F. Melt the butter in a saucepan or in the microwave.

Corn on the cob

Step 2

Break off a piece of aluminum foil for each cob of corn. Place the cobs on their respective pieces of foil on a sheet tray. Spoon half the butter over the corn & sprinkle with salt.

Step 3

Wrap up the foil packages & move to one side of the sheet tray.

Cod (fresh)

Step 4

Drizzle the other side of the sheet tray with olive oil. Add the cod fillets (thawed, if frozen) & sprinkle with salt. Transfer to the oven & cook for 10 min.

Parsley (fresh)

Step 5

Meanwhile, finely chop the parsley.

Round butter crackers

Step 6

Using your fingers, crush the crackers into a bowl.

Bread crumbs (panko)

Step 7

Add the panko, grated or minced garlic & parsley. Season with salt & pepper. Add the remaining melted butter & mix with a spoon.

Lemon

Step 8

After cooking for 10 min, remove the sheet tray from the oven. Squeeze the lemon over the cod. Spoon the cracker mixture over each piece & gently press it down so it sticks. Don't worry if some of it falls onto the sheet tray!

Step 9

Return to the oven & cook for another 5-8 min, until the cod flakes easily & the cracker crust is golden.

Step 10

Plate the cod & corn. Top with more parsley & another squeeze of lemon. Serve & enjoy!
