Knife, Stovetop, Frying pan
Wash the pepper, remove the seeds & slice.
Wash & thinly slice the green onion. Separate the light green & white pieces from the darker green.
Heat a drizzle of oil in a pan over medium-high heat. Season the chicken breast with half of the cajun seasoning. Add the chicken & cook undisturbed for 5-8 min. Flip & cook for another 5-8 min or until the chicken is fully cooked through. Transfer to a cutting board.
To the same pan, add another drizzle of oil, the lighter slices of green onion & the sliced bell peppers. Season the vegetables with the remaining cajun seasoning. Sauté for 3-4 min on medium heat until softened.
Add the tomato paste & cook for 1 min until it browns slightly.
Add the pasta & enough water to fully cover the pasta & vegetables. Season with salt & bring the water to a boil. Lower to a simmer & cook the pasta for 8 min, stirring occasionally.
Meanwhile, slice the chicken.
Add the heavy cream to the pasta. Stir & cook for 1 min until the sauce has thickened. Top with the remaining green onion slices.
Add the sliced chicken, serve & enjoy!
