In a small bowl, whisk the eggs with salt & pepper.
In a frying pan over medium heat, heat a pat of butter or drizzle of olive oil. Pour the eggs into the pan.
Cook for 1–2 minutes, until the eggs are beginning to firm up around the edges but are still moist in the middle.
Add the cream cheese, carefully spreading it over half the omelette. Then fold the omelette in half. Cook until the eggs are done to your liking.
Remove from heat. Serve omelette alongside a bed of greens drizzled with olive oil. Season with salt & pepper. Enjoy!
