Coconut Rice with Shrimp & Corn

Stovetop, Pot (large)


White rice

Step 1

Heat a drizzle of oil in a pot over medium heat. Add the rice. Cook, stirring for 2 min.

Coconut milk (canned)

Step 2

Reduce the heat to low. Add the coconut milk & 0.25 cup of water (per person). Season with salt & pepper. Cover & simmer for 20 min.

Shrimp (cooked)
Corn (canned)

Step 3

When the rice is al dente, add the corn & shrimp. Stir over low heat until the shrimp is heated through. Add more liquid if needed.

Cilantro (fresh)

Step 4

Serve garnished with fresh cilantro (optional). Season with salt & pepper. Enjoy!
