Step 1
Slice off the ends of the grapefruit. Remove the rind. Cut out each section with a knife. Remove the seeds, if necessary.
Step 2
Cut the orange into sections in the same way.
Step 3
Wash & quarter the tomatoes.
Step 4
Peel the avocado & remove the pit. Cut the avocado into cubes.
Step 5
In a small bowl, whisk together the vinegar, any remaining juices from the fruit, salt, pepper & a healthy drizzle of olive oil.
Step 6
Peel & finely slice the shallot. Add the tomatoes, avocado, orange & grapefruit to a salad bowl. Top with the vinaigrette, minced shallot, salt & pepper. Toss it all together. Enjoy!
