Red onion

Step 1

Preheat the oven to 400°F. Peel & cut the red onions into thin quarters.

Zucchini

Step 2

Wash & cut the zucchini in half lengthwise, then diagonally.

Lemon

Step 3

Wash & cut the lemon into thin slices.

Step 4

To a baking dish, add the onions, zucchini & lemon slices. Add a drizzle of olive oil & mix well.

Cherry tomatoes
Feta cheese (block)

Step 5

Add the cherry tomatoes & the feta blocks cut in half. Season with salt & pepper. Add another drizzle of olive oil. Bake for 15-18 min at 400ºF.

Chicken breast

Step 6

Remove the vegetables from the oven. Add the chicken to the dish. Season with salt & pepper. Add another drizzle of olive oil. Bake again for 20-25 min (or until the chicken is cooked through) at 400°F.

Orzo

Step 7

Meanwhile, in a pot of boiling salted water, cook the pasta according to package directions. At the end of cooking, drain & keep warm.

Basil (fresh)

Step 8

Once the vegetables & chicken are nicely browned, remove the dish from the oven. Serve the orzo pasta with the vegetables, roasted feta & chicken. Add a few basil leaves, if you have them. Enjoy!
