Clean & slice the mushrooms.
Cut the chicken into thin strips.
Peel & mince the garlic & ginger.
Heat a drizzle of oil in a pot over medium heat. Add the chicken, garlic & ginger. Cook, stirring for 2 min.
Add the chicken stock & bring to a simmer.
Stir in the miso paste. Add the udon noodles & fresh black pepper. No need to add salt, as miso is salty! Reduce the heat to low, cover & cook for 10 min.
Serve the soup in bowls, garnished with fresh cilantro (optional). Enjoy!
