Step 1
Preheat the oven to 425°F. Spread most of the marinara sauce on the bottom of a casserole dish or oven-proof skillet. Reserve about 1/4 cup of sauce.
Step 2
In a bowl, add ground chicken, egg, parmesan cheese, Italian seasoning, bread crumbs & 2 tbsp of water. Season with salt & pepper. Mix everything together with your hands or a spoon until well combined.
Step 3
Form meatballs about 1 1/2 inches thick & place them in the dish on top of the sauce. Top each meatball with a spoonful of the remaining sauce. Bake for 20-25 min or until meatballs are fully cooked (internal temp reaches 165°F.)
Step 4
While the meatballs are in the oven, boil a pot of salted water & cook the penne according to package directions. Drain & set aside.
Step 5
Remove meatballs from the oven & add mozzarella cheese. Broil or bake at 425°F for 5 min, until cheese is bubbling & melty.
Step 6
Serve penne topped with saucy meatballs. Top with Parmesan cheese & enjoy! ;-)
