White rice (long grain)

Step 1

Cook the rice according to the package instructions.

Yellow onion

Step 2

Peel & thinly slice the onion.

Chicken breast

Step 3

Cut the chicken into pieces.

Cayenne pepper

Step 4

Heat a drizzle of oil in a pot over medium heat. Add the onions. Sauté for 3 min. Add cayenne if you like a kick (optional)!

Crushed tomatoes

Step 5

Add the tomatoes & stir.

Peanut butter
Chicken broth

Step 6

Add the chicken broth (or bouillon cube with water!) & the peanut butter. Stir to combine.

Chicken breast

Step 7

Add the chicken & stir. Season with salt & pepper. Reduce the heat to medium-low. Cook for 5-10 min, or until the chicken is cooked through.

Step 8

Serve the mafé alongside fluffy rice. Garnish with a drizzle of olive or peanut oil. Enjoy!
