Cook the rice according to the package instructions.
Peel & thinly slice the onion.
Cut the chicken into small pieces.
Heat a drizzle of oil in a pot over medium heat. Add the onions. Sauté for 3 min. Add the cayenne if you like a kick (optional)!
Add the tomatoes to the pot. Stir & cook for 1-2 min.
Then add the chicken broth & peanut butter. Stir to combine.
Add the chicken & stir. Reduce the heat to low. Simmer the mixture for 10 min, or until the chicken is cooked through. Season to taste with salt & pepper.
Serve the mafé alongside fluffed rice. Garnish with a drizzle of olive oil or peanut oil. Enjoy!
