Step 1
Pat the chicken dry. Cut the chicken into large chunks.
Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken to the pan. Stir & brown for 5-7 min. Season with salt & pepper. (Add a pinch of cayenne powder for a kick!)
Step 3
Add the tomato purée, couscous, chickpeas & cumin. Stir well to combine.
Step 4
Add the chicken stock or water with a bouillon cube (equal amounts liquid to couscous). Add in raisins (optional). Mix it all together. Reduce the heat to low, cover & simmer for 8-10 min. Once the chicken is fully cooked & the couscous has soaked up all the liquid, remove from the heat.
Step 5
Serve garnished with cilantro (optional). Add a drizzle of olive oil. Enjoy!
