Step 1
Cut the chicken into large chunks.
Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken & brown for 3-5 min. Season with salt & pepper. (Add a little cayenne for a kick!)

Add the tomato purée, couscous, chickpeas & cumin. Season with salt & pepper. Stir to combine.
Step 4
Add the chicken stock & raisins. Season with salt & pepper. Reduce the heat to low, cover & simmer for 3-5 min.
Step 5
Serve garnished with cilantro (optional). Add a drizzle of olive oil. Enjoy!
