Cut the chicken into large chunks.
Heat a drizzle of olive oil in a pan over medium-high heat. Add the chicken & brown for 3-5 min. Season with salt & pepper. (Add a little cayenne for a kick!)
Add the tomato purée, couscous, chickpeas & cumin. Stir to combine.
Add the chicken stock & raisins. Season with salt & pepper. Reduce the heat to low, cover & simmer for 3-5 min.
Serve garnished with cilantro (optional). Yum!
