Not your average quesadilla! It's cheesy, meaty & oh so delicious :-)
Stovetop, Frying pan, Knife
Step 1
Wash & slice the bell pepper.
Step 2
Peel & thinly slice the red onion.
Step 3
Pat the steak dry. Season with salt & pepper. Add additional seasonings like cumin, chili powder & onion powder if you have any!
Step 4
Heat a drizzle of olive oil in a skillet over medium-high heat. Add the sliced veggies & cook for 1-2 min. Add the seasoned steak to the pan. Cook for 3-4 min on each side (if your steak is thicker than 1/2 inch, add another 2-3 min per side). Remove the steak & veggies from the pan.
Step 5
Let the steak rest for 2-3 min. Thinly slice the steak.
Step 6
Wipe out the pan & add the tortilla over medium heat. On one half of the tortilla, add the shredded cheese. Top with the cooked veggies & sliced steak. Top with the remaining cheese.
Step 7
Fold the tortilla in half & cook for 2-3 min. Flip & cook for another 1-2 min. Remove the quesadilla from the pan.
Step 8
Slice the quesadilla into 3 wedges. Serve with sour cream & guacamole. Enjoy!
