Spread the sour cream onto each slice of bread.
Add the sliced brie to half of each sandwich. Smear the cherry jam over the other half.
Top the cherry jam side with spinach (optional). Season all the slices with salt & pepper. Then close the sandwiches.
Melt a dab of butter in a pan over medium heat. Add the sandwiches. Cook for 2-3 min on each side. Lowering the heat if the bread gets too crispy before the cheese gets melty.
Turn off the heat, cover & set aside for 1 min.
Slice the sandwiches on the diagonal.
