French steak is magnifique!
Stovetop, Frying pan, Pot (small), Colander
Peel & cube the potatoes.
Add the potatoes to a pot of salted boiling water. Cook for 10 min, or until fork-tender.
Peel & mince the shallot.
Melt a pat of butter in a pan over medium-high heat. Add the shallot & a pinch of salt. Cook, stirring for 3 min. Add a splash of water to deglaze the pan.
Mince the chives. Set aside.
Once the water has evaporated from the pan, add the steak. Cook undisturbed for 3-5 min each side, or until the steak is done to your liking.
Drain the potatoes, reserving a bit of the cooking liquid. In a bowl, combine the potatoes, reserved cooking liquid, salt, pepper & a dab of butter. Mash with a fork or potato masher until smooth & creamy.
Remove the steak from the pan. Leave the shallots over the heat. Add a dab of butter to the pan. Reduce the heat to medium-low. Cook, stirring for 1-2 min.
Add the chives to the creamy mashed potatoes.
Serve the mashed potatoes alongside the steak. Pour the shallot gravy over all. Bon appétit!
