Make sure you have...
Knife, Stovetop, Frying pan, Skewers
Step 1
Pat the shrimp dry & add to a bowl with 1/2 the BBQ sauce. Toss until nicely coated. Evenly thread the shrimp onto skewers.
Step 2
Heat a grill pan over medium-high heat. Brush the grooves with oil. Grill the skewers for 5-7 min, turning twice as they cook. Each time you turn the shrimp, brush with the extra BBQ sauce.
Step 3
As the shrimp grill, prepare the salad. Wash & roughly chop the lettuce.
Step 4
Wash & halve the tomatoes.
Step 5
In a mixing bowl, add the lettuce, tomatoes & fire roasted corn. Drizzle in the avocado-lime dressing & toss it all together.
Step 6
Once the shrimp are nicely charred & fully cooked, remove from the heat. Plate the salad with the skewers on top. Serve & enjoy!
Marinate the shrimp for 15-30 min if you have the time!
