Make sure you have...
Oven, Sheet Tray, Knife
Step 1
Preheat the oven to 400°F. Peel & slice the carrots on an angle.
Step 2
Peel & large dice the potatoes.
Step 3
Peel & quarter the onions.
Step 4
Line a sheet tray with parchment paper. Add the veggies with a drizzle of olive oil, salt & pepper. Toss to coat well then spread in an even layer. Roast in the oven for 20 min at 400°F.
Step 5
While the veggies roast, combine balsamic vinegar with the honey. Mix until smooth.
Step 6
Add the pork tenderloin to a dish & pour in the sweet balsamic sauce. Evenly coat the meat in sauce then refrigerate.
Step 7
Once the veggies have cooked for 20 min, remove the sheet tray from the oven. Give everything a stir & create an empty space in the center. Add the pork & pour any remaining sauce overtop. Add a splash of water (around 1.5 tbsp of water per person). Season with salt & pepper then return everything to the oven & roast for 30 min at 400°F.
Step 8
Remove everything from the oven & check for doneness. Cut the pork into slices & serve. Enjoy!
