Bacon (cooked)

Step 1

Preheat the oven to 350ºF. Cut the bacon into 1/2-inch pieces.

Egg
Cottage cheese
Gruyère cheese (shredded)

Step 2

In a blender or food processor, add the eggs, cottage cheese & half of the grated cheese. Season with salt & pepper. Blend until smooth, about 30 sec.

Step 3

Add about 1 inch of water to an oven-safe dish & place on the bottom rack of the oven. This helps create a moist environment in the oven so the egg bites come out creamy!

Step 4

Place a silicone mold (or cupcake tins) onto a large sheet tray. Spray the mold with cooking spray. Pour the egg batter into the mold, making sure to distribute the batter evenly.

Step 5

Top the egg bites with the chopped bacon & remaining grated cheese. Place in the middle rack of the oven & bake at 350ºF for 30-35 min or until the egg is fully set.

Step 6

Remove the egg bites from the oven & let cool for 10-12 min. Remove the egg bites & serve. Top with fresh herbs if you have any. Enjoy!
