Asparagus (fresh)

Step 1

Preheat the oven to 400°F. Wash & trim the asparagus.

Add the asparagus to a pot of salted boiling water. Cook for 2-3 min, or until crisp-tender.

Puff pastry

Step 3

Be sure to follow the puff pastry package instructions! Unroll the dough onto a parchment-lined backing tray. Use a rolling pin to thin the dough. Pierce it several times with a fork. Bake for 5 min at 400°F.

Heavy cream

Step 4

In a small bowl, mix together the goat cheese, heavy cream, salt, pepper & a drizzle of olive oil.

Puff pastry

Step 5

Remove the puff pastry from the oven. Carefully spread the goat cheese-cream mixture over the dough, leaving a border around the edges.

Asparagus (fresh)

Step 6

Arrange the asparagus over the tart.

Step 7

Season with salt & pepper. Bake for 15-20 min at 400°F.

Pesto

Step 8

In a small bowl, mix together the pesto & a drizzle of olive oil.

Remove the tart from the oven. Drizzle the pesto over top. Serve & enjoy!
