Step 1
Preheat the oven to 400°F. Peel & cut the sweet potatoes into cubes.
Step 2
Add the sweet potatoes to a parchment-lined sheet tray. Drizzle with olive oil. Season with salt, pepper & paprika. Mix then bake for 20-25 min at 400°F.
Step 3
Meanwhile, cut the chicken into cubes.
Step 4
Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken. Season with salt & pepper. Cook for 4-5 min on each side, or until fully cooked.
Step 5
Meanwhile, prepare the yogurt sauce. In a bowl, mix the Greek yogurt, grated garlic, lemon zest & juice. Add a drizzle of olive oil. Season with salt & pepper. Mix to combine. Set aside in a cool place.
Step 6
Check the chicken for doneness. Once fully cooked (internal temp reaches 165°F), remove from the heat & keep warm.
Step 7
Once golden brown & cooked through, remove the sweet potatoes from the oven.
Step 8
Reheat quinoa according to package instructions.
Step 9
Serve the quinoa in a bowl with the yogurt sauce, sweet potatoes & chicken. Sprinkle with crumbled feta & chopped parsley, if you have any. Season to taste & enjoy!
