Let's taco-bout these delicious spiced chicken skewers!
Make sure you have...
Stovetop, Frying pan, Knife
Step 1
Wash & cut the peppers, removing the core & seeds. Cut them into 2-inch pieces.
Step 2
Dice the chicken into 1-inch cubes.
Step 3
Peel the onion. Cut into quarters & separate the layers.
Step 4
In a large bowl, add the chicken, peppers, onions, taco seasoning & a generous drizzle of of olive oil. Season with salt & pepper. Stir to combine.
Step 5
On a skewer, layer the chicken, pepper & onion pieces. Repeat this process 3-4 times, depending on the length of your skewer.
Step 6
Add the skewers to a skillet or grill pan on medium heat. Cook undisturbed for 4-5 min. Flip the skewers & add a small splash of water to the pan. Cover & continue cooking for 6-8 min over medium heat, until the chicken is fully cooked (165°F internal temp).
Step 7
Meanwhile, wash & cut the cucumbers into half-moons.
Step 8
Wash & cut the cherry tomatoes in half.
Step 9
Once the skewers are cooked through, set them aside off the heat.
Step 10
Add the spring mix to a dish topped with the cucumbers & cherry tomatoes. Dress & season to taste, then add the skewers. Serve & enjoy!
These skewers would be delicious on the grill if you have one! If using wooden skewers, soak them in water for about 30 min before grilling (pan-frying or on the barbecue) to prevent them from burning.
