Stovetop, Frying pan, Knife
Step 1
Finley chop the pickles.
Step 2
Thinly slice the onion into rounds.
Step 3
Quarter the cheese into smaller squares.
Step 4
In a small bowl, combine the chopped pickles with Thousand Island dressing. Mix it all together.
Step 5
Portion the beef into approximately .75 oz pieces. There will be two patties on each slider, so for 1 serving, create 6 portions. Gently roll each portion into a small ball.
Step 6
Heat a cast iron skillet over medium-high heat. Toast the slider buns, cut-side down on the pan for 1-2 min. Remove & set aside.
Step 7
Melt the butter in the hot skillet. Add 2 patties (work in batches so there is enough room for smashing the burgers). Immediately smash the burgers down with a wide, flat spatula or steel press. Season all over with salt, pepper & garlic powder if you have. Cook for about 1 min, until it's nicely seared.
Step 8
Scrape up the patties & flip them over. Smash down again. Season the other side & cook for 1 more min. Add a piece of cheese over the patty. Stack one patty on top of the other. Let the cheese melt. Remove the double cheeseburgers & set aside. Cook the remaining burgers.
Step 9
When the patties are ready, spread some of the creamy sauce over the bottom buns. Top with the cheeseburgers. Add some shredded lettuce & sliced onion. Serve & enjoy!
