Step 1

Run cold water over matzo for 20 sec to soften slightly. OR in a flat-wide bowl, filled with cold water, soak the matzo for 15 sec to soften.

Step 2

In a flat-wide bowl, crack the eggs. Add milk & a pinch of salt. Whisk it all together.

Break the softened matzo into 2 inch pieces & add to the egg mixture. Toss to evenly coat the matzo.

Step 4

Heat two dabs of butter on a non-stick pan over medium-high heat. Add everything to the pan. Gently stir & cook the egg-coated matzo until the edges begin to brown, about 4-5 min. Remove from heat.

Serve hot with your favorite toppings! We love maple syrup, honey, or a sprinkle of sugar! For a savory twist, try adding caramelized onions & chives. Enjoy!
