Sweet potato
Olive oil

Step 1

Preheat oven to 400°F. Peel & small dice the sweet potatoes. Add to a sheet tray. Drizzle with olive oil, season with salt & roast for 15-20 min, until tender.

Yellow onion
Black beans (canned)

Step 2

Peel & small dice the onion. Drain & rinse the black beans.

Step 3

Heat a drizzle of olive oil in a frying pan on medium heat. Add the onion & a pinch of salt. Cook until softened, 3-4 min.

Ground turkey
Taco seasoning

Step 4

Add the ground turkey & taco seasoning. Cook for 3-4 min, stirring often, until the meat is no longer pink.

Corn (frozen)
Crushed tomatoes

Step 5

Stir in the black beans, corn & crushed tomatoes. Simmer for 4-5 min, stirring occasionally.

Step 6

When the sweet potatoes are tender, remove from the oven & add to the skillet. Stir to combine.

Cilantro (fresh)
Lime

Step 7

Season to taste with salt & more taco seasoning, if you'd like. Garnish with fresh cilantro & lime (optional). Serve & enjoy!
