Taquitos are deliciously fried, rolled-up tacos! We love this baked method for a little less mess :)
Make sure you have...
Oven, Sheet Tray, Knife
Step 1
Preheat the oven to 400°F. Peel & small dice the onion.
Step 2
Heat a drizzle of oil in a pan over medium heat. Add the diced onion & sauté for 1-2 min until slightly softened.
Step 3
Add in rinsed & drained black beans. Stir in taco seasoning & cook for 2-3 min until heated through. Mash the softened beans with the spoon. Remove from the heat.
Step 4
Dampen two paper towels & wrap them around the corn tortillas. Place the wrapped tortillas on a plate & heat in the microwave for 35-40 sec. This will soften the tortillas so they are able to roll up nicely!
Step 5
In a small bowl, combine sour cream, lime juice & a pinch of salt. Mix well until the sour cream is thinned out.
Step 6
Fill a softened tortilla with a few spoonfuls of the bean mixture. Top with shredded cheese & roll up tightly. Repeat the process with the remaining ingredients.
Step 7
Melt a few tbsp of butter in the microwave or in a small pan over low heat. Meanwhile, transfer all the taquitos to a parchment-lined sheet tray. Then brush each one with melted butter. Bake in the oven at 400°F for 25-30 min, flipping halfway through. The taquitos should be golden & crispy!
Step 8
Remove the crunchy taquitos from the oven. Serve drizzled with the creamy lime sauce & guacamole! Enjoy!
