Ingredients
Make sure you have...

Stovetop, Frying pan

Step 1
Slice the chicken into strips.

Step 2
Heat a drizzle of olive oil in a pan, over medium-high heat. Add the chicken & the taco seasoning. Sear the chicken for 6-8 min

Step 3
Add the drained corn & continue cooking for another 1-2 min. Set aside.

Step 4
Slice the avocado in half & remove the pit. Scoop out the flesh & dice the avocado.
Step 5
Prepare the guacamole. In a bowl, add : the diced avocado & some lime juice & zest, if you have some. Season with salt & pepper. Mash the avocado with a fork.


Step 6
Spread the guacamole over half of each tortilla. Layer on the chicken / corn mix & top with the shredded cheese. Fold the empty half of the quesadilla over the fillings.
Step 7
Heat a drizzle of olive oil in a pan, over medium heat. Add the quesadillas & cook for 2-3 min on each side, until golden & crispy. Cover & continue cooking for another min.

Step 8
Cut the chicken, corn & avocado quesadillas in halves or thirds & serve with a side of salsa. Enjoy !
