Step 1

Preheat the oven to 350°F. Peel & slice the yams into 1/2 inch rounds.

Add the sliced yams to a pot & cover with cold water. Boil the yams for 15-20 min, careful not to cook them all the way through, just until slightly tender.

Brown sugar (light)
Butter (unsalted)
Nutmeg (ground)
Orange

Step 3

Meanwhile, in a small pan over medium heat, combine brown sugar, butter, a pinch of salt, nutmeg, orange zest & orange juice. Bring the mixture to a boil, then reduce the heat to simmer. Cook 6-7 min, allowing the sauce to thicken.

Step 4

Strain the mostly cooked yams & allow them to cool slightly. Grease a baking dish with butter or cooking spray. Layer the yams in the dish.

Step 5

Pour the sauce over the yams. Cover the baking dish with foil & bake in the oven at 350°F for 20 min or until the yams are fully softened. Remove from the oven.

Marshmallows (mini)

Step 6

Top the yams with a layer of marshmallows. Return to the oven to bake another 5 min, until the marshmallows are brown & toasty. Serve hot & enjoy!
