Hot & crispy tortilla chips, melted cheese & fresh veggies - these nachos are to die for!

Step 1
Preheat the oven to 375°F. Peel & finely dice the red onions. Set aside.
Step 2
Add the tortilla chips to a baking dish in one even layer.
Step 3
Spread drained & rinsed kidney beans over the chips & top with shredded cheddar. Bake in the oven for 8-10 min until the cheese is melty & bubbling.
Step 4
Meanwhile, wash & halve the cherry tomatoes.
Step 5
Peel the avocado & remove the pit. Scoop the avocado into a bowl & mash it up. Add lime juice, salt & pepper. Mix it all together.
Step 6
Remove the melty nachos from the oven.
Step 7
Top with tomatoes & onions.
Step 8
Garnish with fresh cilantro (optional). Serve the nachos with mashed avocado & lime wedges. Enjoy!
