Pasta (spinach and ricotta tortellini)

Step 1

Cook the tortellini according to the package instructions. Drain & cool in the refrigerator.

Balsamic vinegar
Olive oil

Step 2

In a mixing bowl, whisk together the balsamic vinegar, olive oil, salt & pepper.

Mixed baby greens

Step 3

Add the salad greens to the dressing & toss.

Step 4

Pour the chilled tortellini into a serving bowl. Add the dressed salad.

Parmesan

Step 5

Shave or sprinkle parmesan over top. Mix it all together.

Pine nuts

Step 6

Garnish with pine nuts (optional). Season with salt & pepper. Enjoy!
