Step 1
Wash the bell pepper & remove the seeds. Small dice the pepper.
Step 2
Peel & small dice the onion.
Step 3
Heat a drizzle of oil on a skillet over medium heat. Add the peppers & onions. Stir to cook until slightly softened, about 3-4 min.
Step 4
Add in the ground beef. Break it up with the spatula. Brown the meat until it's no longer pink, about 3-4 min. Season with salt & pepper. We also love adding a few shakes of chili powder, garlic powder & a pinch of granulated sugar for some sweetness. Mix it all together for 1 more min.
Step 5
Add diced tomatoes, Worcestershire sauce & beef broth. Stir it all together & allow the liquid to boil for 1 min. Reduce the heat & stir in the rice. Cover the pan & simmer until the rice is fully cooked, about 15-20 min. (For brown rice, double the cook time!)
Step 6
Uncover the pan & stir. Once most of the liquid is absorbed, turn off the heat. Season again if needed then top the mixture with shredded cheddar cheese. Cover the pan for about 1 min so the cheese can melt. The mixture will continue to thicken as it sits before serving.
Step 7
Garnish with fresh herbs if you have! Serve & enjoy!
