Spicy Sausage, Tomatoes & Couscous

Step 1

Chop the onion.

Heat a drizzle of olive oil in a pan over medium heat. Add the onion & cook, stirring for 3 min.

Sausage (smoked)

Step 3

Add the sausage & brown for 2 min on each side.

Tomatoes (crushed)
Harissa (paste)

Step 4

Add prepared harissa & tomatoes. Season with salt & 1 cup of water (per person). Cook for 5 min.

Couscous
Vegetable bouillon (cube)

Step 5

Add the dry couscous to a heatproof bowl. Crumble the bouillon cube over top (optional). Season with salt & pepper. Add with equal parts boiling water. Stir, cover & set aside.

Step 6

Once the couscous has absorbed all the water. Fluff with a fork. Serve the spicy tomato-sausage mixture over the couscous. Garnish with fresh mint leaves (optional) & oil. Enjoy!
