Baby potatoes

Step 1

Preheat the oven to 450°F. Cook the potatoes in a pot of salted boiling water for 10 min.

Chives (fresh)
Lemon
Sour cream

Step 2

While the potatoes are cooking, combine the sour cream, lemon juice, lemon zest, salt & pepper. Add chopped chives (optional).

Drain the potatoes when they're fork-tender.

Place the potatoes on a baking sheet lined with parchment paper. Smash them with the bottom on a small pot or cup to break them open.

Drizzle the potatoes with olive oil. Season with salt & pepper. Bake for 10 min at 450°F.

Step 6

Once the potatoes are golden brown, remove from the oven.

Sour cream

Step 7

Dress the greens with olive oil, salt & pepper. Drizzle the chive-cream sauce over the potatoes, salad & smoked salmon. Serve & enjoy!
