Salmon with Cheesy Mashed Potatoes & Broccoli

Ingredients

Stovetop, Pot (small), Frying pan

Step 1
Peel & cube the potatoes.
Step 2
In a pot of salted boiling water, add the potatoes. Cook for 12-15 min, over medium heat.

Step 3
Meanwhile, wash & cut the broccoli into bite-sized pieces.
Step 4
In a second pot of salted boiling water, add the broccoli. Cook for 5-6 min, until tender. Drain the broccoli & set aside to keep warm.

Step 5
Meanwhile, heat a drizzle of olive oil in a skillet, over medium heat. Pat the salmon dry with a paper towel & season with salt & pepper. Sear the salmon 6-8 min undisturbed, until cooked through. Set aside to keep warm.

Step 6
Once cooked through, reserve a ladle of cooking water & set aside. Drain the potatoes & add them back to the pot with the garlic & herb spreadable cheese. Mash using a fork or a potato-masher until smooth & creamy. If needed, add a splash of the reserved cooking water for desired consistency.

Step 7
Serve the cheesy mashed potatoes in a plate with the salmon & broccoli. Garnish with freshly chopped chives & re-season to taste. Enjoy!
