Jasmine rice

Step 1

Cook the rice according to package instructions.

Shallot

Step 2

Meanwhile, peel & finely mince the shallots.

Ground beef
Egg
Bread crumbs (plain)
Parmesan (grated)

Step 3

Prepare the meatballs. In a large bowl, add: the minced beef, eggs, shallots, bread crumbs & grated parmesan cheese. Season with salt & pepper. Mix everything together with your hands or a spoon until well combined.

Step 4

Form meatballs about 1 1/2 inches thick & place them on a dish.

Step 5

Heat a drizzle of olive oil in a pan, over high heat. Add the meatballs & cook for 7-8 min, flipping halfway through, until golden brown & cooked through.

Marinara sauce

Step 6

Add the marinara sauce to the meatballs. Stir, then cover & leave to simmer for 3 mins, over low heat.

Step 7

Serve the rice in a shallow plate with the marinara meatballs. Top with extra grated parmesan & re-season to taste. Enjoy!
