Step 1
Preheat the oven to 450°F. Wash & halve the cherry tomatoes.
Step 2
Cut the sausages into thick slices.
Step 3
Add the cherry tomatoes, crushed or minced garlic, most of the basil (reserve some for garnish) & a drizzle of olive oil to a baking dish.
Step 4
Add the sausage slices, salt & pepper. Mix to combine.
Step 5
Lay the salmon over top the tomato-sausage mixture. Season the fish to taste. Bake for 15-20 min at 450°F, or until the salmon is cooked to your liking.
Step 6
Serve garnished with the remaining basil, the arugula & a drizzle of oil. Enjoy!
