This ketchup-based marinade is sticky, sweet & oh so delicious!

Step 1
Preheat the oven to 400°F. Prepare the marinade. In a bowl, mix the ketchup, soy sauce, grated ginger & garlic. Add a drizzle of olive oil & mix again.
Step 2
Add the marinade & chicken drumsticks to a bowl. Coat the chicken with the mixture, then set aside in the fridge for 10-15 min.
Step 3
Meanwhile, clean & cut the potatoes into long wedges (peeling is optional).
Step 4
On a parchment-lined sheet tray, add the potato wedges. Drizzle with olive oil & sprinkle with paprika. Season with salt & pepper. Toss to coat, then bake for 35-40 min at 400°F.
Step 5
Meanwhile, add the marinated chicken drumsticks to a baking dish & bake for 30-35 min at 400°F.
Step 6
Once the potato wedges are golden brown & the chicken is cooked through, remove them from the oven.
Step 7
Serve the potato wedges & chicken on a plate with extra ketchup on the side (optional). Sprinkle with fresh cilantro (optional) & season to taste. Enjoy!
