Spaghetti & meatballs but make them super green & packed with flavor!

Stovetop, Knife, Oven, Sheet Tray
Step 1
Preheat the oven to 400ºF. In a large mixing bowl, add the ground chicken, grated parmesan cheese, panko breadcrumbs, egg & 3/4 cup of the pesto (per 4 servings). Mix to combine.
Step 2
Form the meat mixture into 12 meatballs, about 3 tbsp each. Place the meatballs on a parchment paper-lined sheet tray. Add a drizzle of olive oil to the meatballs & place in the oven. Bake the meatballs at 400ºF for 15-18 min or until the meatballs are fully cooked through.
Step 3
Meanwhile, cook the spaghetti according to package instructions. Drain the pasta & put it back into the pot. Add the spinach & remaining pesto. Stir to combine & allow the spinach to wilt.
Step 4
Serve the spaghetti topped with the chicken pesto meatballs. Garnish with additional grated cheese & fresh basil if you have any. Enjoy!
