Paneer

Step 1

Preheat the oven to 425°F. Cut paneer into 1/2 - 1 inch pieces.

Bell pepper (assorted)

Step 2

Wash the peppers & remove the seeds. Large dice the peppers.

Red onion

Step 3

Peel & large dice the onion.

Greek Yogurt (plain)
Cumin (ground)
Garam masala
Chili powder
Turmeric (ground)
Olive oil
Lemon

Step 4

In a large bowl, add greek yogurt, cumin, chili powder, garam masala, turmeric, salt, pepper, a generous drizzle of olive oil & lemon juice. Mix it all together. Add in the cubed paneer, diced onion & peppers. Toss to coat evenly. Cover the bowl with plastic cling wrap & refrigerate for a minimum of 30 min (no longer than overnight).

Step 5

While everything marinates, pre-soak bamboo skewers in water. This will prevent burning in the oven! Assemble the skewers: arrange a few pieces of peppers, onions & a cube of paneer. Repeat the pattern on the same skewer 1-2x. Repeat the process with the remaining ingredients & lay each skewer on a sheet tray lined with foil.

Step 6

Spritz the skewers with cooking spray & bake in the oven for 10-12 min, until the paneer is slightly charred on the outside. Serve with warm naan or fluffy basmati rice. Enjoy!
