Cook the rice according to the package instructions.
While the rice is cooking, cut the pork tenderloin into 1-inch thick slices.
Heat the oil in a frying pan over medium-high heat. Add the pork & cook for 2 minutes on each side.
Lower the heat to medium. Add the soy sauce, balsamic vinegar, sugar & grated or minced ginger. If necessary, deglaze the pan with 2-4 tbsp of water. Stir the sauce & pork.
Lower the heat, cover & cook for 10 minutes.
Serve the caramelized pork over rice with a garnish of sesame seeds (optional). Enjoy!
