Cook the rice according to the package instructions.
Pat the chicken dry with a paper towel. Cut the chicken into small pieces. Heat a drizzle of oil in a pan over medium-high heat. Add the chicken. Season with salt & pepper. Cook, stirring for 5 min.
In a small bowl, zest & juice the orange. Add soy sauce, grated or minced garlic, brown sugar & corn starch. Mix to combine.
Reduce the heat of the pan to medium-low. Pour in the orange sauce. Cook the chicken for 1-2 min, stirring as the sauce thickens.
Serve the orange chicken alongside a fluffy bed of rice. Season to taste with salt & pepper. Enjoy!
