Slice the chicken sausage.
Thinly slice the sun-dried tomatoes.
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken sausage. Stir & cook until brown on all sides, about 2-3 min. Transfer to a plate.
In the same heated pan, add orzo & 1/2 a cup of water per serving. Stir & season with salt. Bring it to a boil & cook until most of the water is absorbed, about 6 min.
Add spinach, sun-dried tomatoes & pesto. Cook, stirring until the spinach is wilted & the liquid is absorbed, about 2-3 min.
Add grated parmesan & the heated chicken sausage to the pan. Stir to combine.
Serve in a bowl with extra grated parmesan cheese on top! Enjoy!
