Step 1
Clean & slice the mushrooms, if needed.
Step 2
Peel & mince the shallot.
Step 3
Heat a drizzle of oil in a non-stick pan over medium-high heat. Add the mushrooms & shallot to the pan. Cook, stirring for 3-5 min.
Step 4
In a bowl, whisk together the eggs, salt & pepper for 20 seconds.
Step 5
Add a dab of butter to the same pan. Spread the mushroom mixture evenly in the pan. Pour the whisked eggs over top. Lift the edges & let the uncooked egg flow underneath. Cook until the eggs begin to set, or about 2-3 min.
Step 6
Lay the Swiss cheese over half of the omelette. Carefully fold the other half of the omelette over the cheese. When the omelette is cooked to your liking, remove from heat.
Step 7
Serve with a spinach salad drizzled with your favorite dressing. Enjoy!
