Creamy mashed potatoes, golden leeks & crisp sweet corn. What a perfectly simple side dish!
Make sure you have...
Stovetop, Frying pan, Microwave, Knife
Step 1
Peel & cube the potatoes. Place them in a microwave-safe dish with a bit of water. Cover & microwave for 5 min, stirring halfway through.
Step 2
Wash, trim & finely slice the leeks. Melt half of the butter in a pan over medium heat. Add the leeks. Season with salt & pepper. Cook, stirring for 3-5 min, or until lightly browned. Add a splash of water & stir.
Step 3
When the water has evaporated, add the frozen corn. Cook, stirring until the corn is thawed. Then remove from heat.
Step 4
Remove the potatoes from the microwave. Pierce with a fork. If not fork-tender, cover & microwave for 2 more min. Once tender, season the potatoes with salt & pepper. Add the rest of the butter. Mash until smooth & creamy, using a fork or potato masher.
Step 5
Serve the mashed potatoes topped with sautéed leeks & corn. Season with salt & pepper. Enjoy!
