Maple-Mustard Salmon & Cauliflower

Step 1

Preheat oven to 400°F. Wash & trim the cauliflower, before cutting into large florets.

Maple syrup
Whole-grain mustard
Garlic
Olive oil

Step 2

In a small bowl, add the maple syrup, mustard, olive oil & minced or crushed garlic. Season with salt & pepper. Whisk to blend.

Step 3

Place the cauliflower in an oven-safe baking dish. Pour most of the sauce (reserve 2-3 tbsp for the salmon) over the cauliflower. Mix to evenly coat. Drizzle with water.

Salmon (fresh)

Step 4

Bake for 15-20 minutes, stirring halfway through. Remove the dish from the oven. Lay the salmon over top & baste with the remaining sauce.

Step 5

Bake for another 10 minutes, or until the salmon is cooked to your liking. Remove from oven & serve immediately. Enjoy!
