Step 1
If using frozen scallops, defrost beforehand.
Step 2
Mince or crush the garlic.
Step 3
Cut the chorizo into slices.
Step 4
Heat a drizzle of olive oil in a pan over medium-high heat. Add the chorizo & garlic. Cook, stirring for 2 min.
Step 5
Add the scallops to the pan. Cook for 2 min.
Step 6
Lower the heat to medium. Add the corn & heavy cream. Cook for 3 more min.
Step 7
Ladle into serving bowls. Garnish with lime zest & juice. Sprinkle with chopped chives (optional). Enjoy!
