Ingredients

Utensils

Stovetop, Pot (small) and Frying pan.

Recipe

Pasta (linguine)

Step 1

In a pot of salted boiling water, cook the pasta according to package instructions. When the pasta is done, set aside a small ladle of cooking water, then drain the pasta.

Yellow onion

Step 2

Meanwhile, peel & thinly slice the onions.

Garlic

Step 3

Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & onions. Sauté them for 4-5 min.

Tomatoes (canned, peeled)

Step 4

Add the tomatoes. Season with salt & pepper. Sauté for 2 min, then cover, lower the heat & simmer for 4-5 min.

Goat cheese (log)

Step 5

Once the tomatoes are tender, stir in half of the goat cheese to create a creamy sauce.

Step 6

Add the linguine to the pan with a splash of reserved cooking water, if needed. Mix again.

Basil (fresh)

Step 7

Serve the tomato & goat cheese linguine topped with the remaining goat cheese & some fresh basil. Re-season to taste & enjoy!
