Step 1
Preheat the oven to 400°F. Peel & cut the red onion into thick wedges.
Step 2
In a small bowl, add 1 tablespoon of olive oil per serving, grated garlic & lemon juice. Season with salt, pepper & any additional seasonings (we love dried thyme & onion powder here!) Mix thoroughly.
Step 3
On a parchment paper lined sheet tray, add the potatoes, chicken thighs & red onion. Season everything with salt & pepper. Brush the chicken & potatoes with the marinade. Roast for 30-35 min at 400°F.
Step 4
Remove the tray from the oven & add the green olives. Roast for another 10 min at 400°F.
Step 5
Remove the tray from the oven, add a few slices of lemon & garnish with fresh herbs if you have any. Enjoy!
