Step 1

Preheat the oven to 350°F. Allow the butter to come to room temperature. Zest & juice the lemons into a bowl.

Butter (unsalted)
Sugar (granulated)

Step 2

In a large bowl, combine softened butter, a 1/4 cup sugar & a pinch of salt. Mix or whisk well to combine.

Flour (all-purpose)

Step 3

Mix in 1 cup of flour until a dough starts to form.

Step 4

In an 8x8 inch baking dish, press the dough in an even layer on the bottom. Bake the crust for 10-12 min or until the edges are lightly browned.

Step 5

In a medium bowl, crack the eggs & add the remaining sugar. Pour in lemon juice (straining out any pulp) & lemon zest. Add a pinch of salt & whisk it all together. Mix in the remaining flour until well combined.

Step 6

Remove the crust from the oven. Pour in the lemon filling & bake at 350°F for 30-35 min, until the filling is set. Remove from oven & cool completely (about 1 hr).

Powdered sugar

Step 7

Slice & top with powdered sugar. Serve & enjoy!
