Peel the potatoes & onion.

Grate the potatoes & onion using a box grater.

Wrap the grated potatoes & onion in a clean kitchen towel. Squeeze out all that excess liquid!

Add the drained mixture to a mixing bowl. Add the flour & eggs. Season generously with salt & pepper. Mix to combine.

Step 5

Heat a drizzle of vegetable oil in a pan over medium heat. A non-stick skillet would be great here! Add a large spoonful of the potato mixture. Press it down with back of spatula to flatten it into a pancake. Repeat with the remaining mixture.

Step 6

Cook for 3-5 min, or until golden brown.

Step 7

Flip over the pancakes. Cook for 3-5 minutes, or until cooked through & crispy.

Spring mix lettuce

Step 8

Serve with a bed of salad greens drizzled with your favorite dressing. Enjoy!
